Carrot Cake

 

Cake:


2 cups sifted flour

1 cup sugar

1 cup brown sugar, firmly packed

2 teaspoons soda

2 teaspoons cinnamon

1 teaspoon salt

1 cup oil

4 eggs

3 cups grated carrots

1 teaspoon vanilla


Combine flour, sugar, soda, cinnamon, salt & oil. Beat in eggs, one at a time. Stir in carrots and vanilla. Turn into two greased 9" pans. Bake at 350º for 30-35 minutes, or until cake springs back when lightly touched. Allow to cool, then frost.

 


Cream cheese frosting:


1 8-ounce package of cream cheese

1 cup butter

1 pound confectioners’ sugar

1 teaspoon vanilla


Cream together cream cheese and butter. Add sugar & vanilla.
